We've been picking and using our peppers for quite a while now; using them in canning salsa's and relishes and sauces.
Today, we said, let's harvest them all and see if we can't process them (mainly because we're done with our salsa, relish, sauce production). We grew jalapeno, habenero, bell, and Italian peppers.
We've come up with 5 ways to use them: I just pressure canned 20 pints of just plain peppers and fermented 2 half-gallon jars. I'm in the process of dehydrating peppers for pepper powder and Ed will be canning a second batch of both "cowboy candy" and pepper jelly (half-pint jars; we'll end up with about 3 cases of each).
I didn't wear gloves while cutting the peppers today and I can feel my fingers tingling... I keep reminding myself not to touch my eyes. I'll have to research a way to get the pepper oils off my hands before I go to bed tonight...
