I picked our first round of garlic scapes this morning (there will be more). I need to find something new to do with them. Historically, I dry them and make garlic scape powder which we use in lieu of garlic powder; problem is, I still have garlic scape powder from last year and the year before.
Time for a new idea on how to use them. I'm contemplating freezing them outright OR making a pesto and freezing that. I'm leaning toward pesto...
Someday, we'll get a little more imaginative as home cooks and find a way to use them fresh!
