First Attempt Making Easy Spinach "Pie"


I saw a couple on YouTube make a version of spinach pie using store bought crescent roll dough so I thought I'd give it a try. I wanted to use some of my canned garden greens.


I don't really follow recipes; however, I did remember the ingredients they used and their general process.


The couple I watched used two tubes of crescent roll dough and each made their own spinach pie. My thoughts were that I didn't need to make two pies, so I started with one package of dough. I went with the store bought dough for my initial version of this pie thinking that down the road, I'd make a pie crust and top from scratch and use that. But given that this was my first time, I wanted to follow their process.


I fried some home grown onions until they were translucent and then added some home grown garlic. I took a pint of my canned greens and added them to the onion / garlic mixture in a bowl. Then I added ricotta cheese (I wanted to add more but I already could tell I had to limit the amount or I would have waaaaay too much filling), grated parmesan, about a tablespoon of lemon juice, salt / pepper along with a little home made hot sauce and one egg.


Looking at my large bowl of filling, I knew that I had significantly more than my one pack of crescent roll dough would tolerate (the couple in the video I watched put the filling on one half of the spread out dough and then folded the dough over and crimped the edges); so, I broke out a second roll of dough to add to the top.


I covered the filling as best I could and then baked at 350 degrees F for about 35 minutes.


The taste test: Very good! ...but, I think it would be better with home made pie dough instead of pre-packaged crescent roll dough. We'll try it that way the next time...
