Chicken Pot Pie - Using Canned Garden Beans and Carrots

We've said this before, but Ed and I are always trying to do our menu planning around the foods we've grown and preserved. The past couple of weeks, I've eaten home made Chili, home made spaghetti, home made indian curry, and eggs (always eggs). For this week, I wanted to make something without using canned tomatoes. I settled on Chicken Pot Pie.


I had to purchase the chicken and potatoes - but the remainder of the filling was made using our home canned veggies (carrots and beans; because we didn't really have any luck with our pea harvest this year, I had to substitute green beans for the traditional pot pie peas). I also used some of our dried mushroom powder (for "umami") as well as our home grown and dried herbs.


Lesson - when there's a will to have something other than eggs (which are always in abundance around here what with our chickens) and where there's a will to use what you have - there's a way!
