Everything happens for a reason. The older I get, the more I believe it. This is just a small example (I've got big examples, but we'll stick with small for now...).


While making my pickled beets today, I was in need of 4-6 onions per the recipe. While picking the needed onions, I noted that the onion necks were flopped and on some of the onions they were starting to get a little mushy. Time to pull them all up (and maybe a day or two late on some).


While visiting us a couple of weeks ago, Henry asked if we had a wheelbarrow (he wanted to use it for something or another). We did not. A week later, a wheelbarrow shows up (Ed had ordered one through Harbor Freight) and it was delivered via a semi truck on our little dirt road (kind of interesting to watch really). Turns out, it's a really nice wheelbarrow and it came in very handy as I harvested my onions and then transported them to our porch for drying. Made pretty easy work of it really.


Searching the internet, it says that cured and properly stored white onions last as long as yellow onions. Red onions - not as long... Ed says we should be able to use them all what with our salsa and sauce canning and that if nothing else, we can give away any excess.


Interesting bit of info: Not too long ago, Ed noticed the onions were going to seed so he picked almost all of the seed heads from the onions before I said "no - wait - it's an old wives tale". Well, not so much an old wives tale. The couple of remaining onions that had not had their seed heads picked did not yield any sort of actual onion at all... Hummm.
